500gms of diced leg of pork
the juice of 1 lemon
1 tbsp of olive oil
2 teaspoons of dried oregano
1 teaspoon of chopped rosemary
1 glove of garlic crushed
1/2 teaspoon of black pepper
Choose 2-3 items from either a red or green pepper cut into chunks
2 courgettes cut into thick slices
red onion cut into chunks
Combine all the ingredients into a medium bowl or resealable bag
trim the pork into 1” cubes. Place in bag or bowl and marinate for 30 minutes in the fridge. You can add the mushroom or courgettes if you like as they will absorb the flavour.
soak the wooden skewers
thread the kebabs alternating between the pork and vegetables. This should make about 8 small skewers. Cook on the BBQ for 10 minutes. Rotate a couple of times. Enjoy.
