Pork with apples is a great combination. I am sure this recipe will become one of your favourites.

Ingrediants

  • 2 pork loin steaks
  • 8gms of butter
  • splash of vegetable oil
  • 1 red onion, peeled and cut into 4 wedges
  • 1 red eating apple, cored and cut into thin wedges

  • 50ml of balsamic vinegar
  • 1 teaspoon of runny honey
  • 1 teaspoon of either fresh or dried thyme

 

Method

In a small shallow dish, mix together the vinegar, honey and herbs and seasoning. Add the pork and turn to coat. Cover and set aside.

Meanwhile heat the butter and oil in a large frying pan. Add the onions and cook for 2-3 minutes stirring occasionally. Add the apples and cook until the onions and apples are starting to caramelise. remove the pan

drain the pork from the marinade and reserve the marinade. Cook the pork for 5-6 minutes over a medium heat, turn the steaks, add the onions, apples and reserved marinade. Continue to cook for another 5 minutes. Test that the juices run clear.

Divide into 2 plates and serve with the sauce, onions, apples and seasonal vegetables.
