Gluten Free Toulouse pork sausages

This flavoursome sausage is taken from the shoulder and belly of my rare breed pigs. It has a 75% meat content and is packed with ground black. Pepper, garlic & cumin. They are a classic ingredient in casssoulet, that a hearty bean, confit and pork casserole. Or simply pan fry or grill in the oven.
